Turkey Enchiladas

2 cups shredded mexican mix cheese;1 onion chopped;1(2 ounce)can sliced black olives drained(optional);1(9ounce)can red enchilada sauce;4cups chopped cooked turkey;24 6-inch tortillas;
Preheat the oven to 350 degrees and lightly grease a 9-by-13 baking dish & spread a thin layer of enchilada sauce over the bottom of the dish.In a separate bowl,combine cheese,onion,and black olives.Add 1 T. cooking oil to a small skillet & heat tortillas,one at a time,until soft.Dip in enchilada sauce to coat.Fill with turkey & cheese mixture,roll and place in baking dish,one at a time until filled(may need to make two layers of enchiladas,if so,spread sauce between layers to prevent sticking).Spread sauce & remaining cheese mixture over the top & bake for 20 minutes or until cheese is melted & enchiladas are heated.ENJOY!!!!
