San Antonio Taco Salad
ingredients: corn oil for deep frying;4(6 inch) flour tortillas;1 pound ground beef or ground turkey; 1/2 med. onion,finely chopped;1 cup salsa; 1(15.25 ounces) can kidney beans;2t. chili powder;2t. cumin;1t. salt;1/8t. pepper;4cups shredded iceberg lettuce, 1 cup shredded cheddar cheese;Optional garnish:sour cream,chopped tomato,sliced black olives and additional salsa.
Directions:1) heat 3 inches oil to 365 degrees F in deep fryer or deep saucepan.Place one tortilla in oil.Let float 5 seconds.Press center of tortilla into oil with metal ladle to form bowl.2)Holding ladle in place fry 1-2 minutes or until lightly golden brown.Drain on paper towel.Repeat with remaining tortillas.3)Brown ground meat and onion in a large heavy skillet over medium-high heat;drain.4)Add salsa,beans chili powder,salt and pepper.Cook over medium heat,stirring frequently,for 5 minutes.Divide lettuce equally between tortilla bowls.Top with meat mixture.Sprinkle with cheese.Top with garnishes.Serve!
NOTE-A few things I'd do next time for myself; I'd use corn tortillas and get the bigger ones,believe they are like 10 inches. these are perfect for children,the 6 inch ones. Hope you enjoy this as much as we did!! I truelly believe its in the spices what makes it so yummy!!! of course we had the sour cream,tomatoes, black olives also..
